Свекольный суп-пюре с гренками и брынзой

Говорят, первыми придумали сочетать свеклу с сыром итальянцы. Низкий им поклон, это действительно вкусно, в любых вариантах. Этот суп тому подтверждение. Если свеклу запечь накануне, то готовится он очень быстро. Правда, съедается еще быстрее.

Суп-пюре из свеклы с чесночными гренками и брынзой, 2013

Рецепт:

3 средние свеклы

1 средняя морковь

1 луковица

3 черешка сельдерея

1зубчик чеснока

1л овощного бульона

100 г несоленой брынзы

хлеб для гренок

листики кинзы

щепотка кайенского перца

оливковое масло

соль

 

Запекаем свеклу. Это лучше сделать накануне. Свеклу смазываем оливковым маслом, по одной заворачиваем в фольгу, отправляем в разогретую до 180оС  духовку на 60-90 мин. Остужаем, чистим, крупно режем.

Морковь, лук и сельдерей режем маленькими кубиками.

В кастрюле с толстым дном обжариваем в масле морковь и сельдерей 5 мин. Добавляем лук и соль, жарим еще 3 мин. Заливаем бульон, варим на слабом огне 15 мин. Добавляем в суп свеклу, варим еще 10 мин. Разбиваем суп блендером до однородности, приправляем кайенским перцем.

Хлеб натираем чесноком, обжариваем на сковородке или в духовке. Брынзу  мелко режем, посыпаем гренки. (Если брынза соленая, ее можно вымочить в молоке.)

Подаем суп с гренками и кинзой.
