Индийские блины из нутовой и рисовой муки с начинкой из картофеля

Как известно, Индия — родина вегетарианства и большинство ее жителей — вегетарианцы. Оттачивая веками свое мастерство, индийцы научились так готовить свои вегетарианские блюда, что от одного только их вида и бесподобного пряного аромата начинается безудержное слюноотделение. А стоит эти блюда отведать, и тогда уже точно станешь поклонником индийской кухни навеки. Хотите убедиться? Начните с этих изумительных блинов, которые мне очень нравятся. Когда я их готовлю, мои домочадцы почти моментально вырастают у меня за спиной, пытаясь стащить блин прямо со сковородки. И я их понимаю. Блины действительно очень вкусные и ароматные до невозможности. А еще они очень сытные и при этом не содержат ни яиц, ни жира, ни пшеничной муки, а значит, и глютена.

Индийские блины из нутовой и рисовой муки с начинкой из картофеля, 2016

Рецепт:

для теста:

1 стакан рисовой муки

1 стакан нутовой или гороховой муки

1 перчик чили

0,5 ч.ложки сахара

0,5 ст.ложки соли

растительное масло для жарки

для начинки:

6-8 картофелин

3 ч.ложки натертого свежего корня имбиря

1 перчик чили

2 ст.ложки растительного масла

2 ч.ложки семян зиры

2 ч.ложки семян горчицы

1 ч.ложку куркумы

 

1. Смешиваем оба вида муки, доливаем воды комнатной температуры столько, чтобы получилась полужидкая масса. Добавляем мелко нарезанный очищенный от семян перец чили, сахар и соль. Перемешиваем, накрываем, оставляем на 1-2 часа.

Если вы плохо переносите слишком острую пищу сократите количество добавляемого в тесто и в начинку перца чили.

2. Перед выпеканием взбиваем тесто веничком, по необходимости доводим до нужной консистенции водой.

3. Сковороду разогреваем, смазываем растительным маслом. Наливаем жидкого теста, равномерно распределяем его по всей поверхности сковороды. Выпекаем 2-3 минуты с одной стороны, затем переворачиваем на другую сторону, жарим еще 1 минуту. Блины должны стать золотистыми, одна сторона должна быть менее поджаристой. Готовые блины складываем на тарелку, накрываем салфеткой, держим в тепле.

4. Для начинки очищенный картофель отвариваем, охлаждаем, разминаем вилкой до состояния пюре.

5. Имбирь очищаем, натираем на мелкой терке. Перец чили очищаем от семян, измельчаем.

6. На сковороде разогреваем 1 ч.ложку масла, обжариваем семена горчицы и зиры. Когда семена начнут трещать, добавляем имбирь и перец чили, перемешиваем, жарим 1 минуту. Кладем картофель, куркуму и соль. Обжариваем, помешивая, еще 2 минуты, затем снимаем с огня.

7. На каждый блин кладем начинку, складываем блин пополам. Слегка обжариваем на масле с двух сторон. Подаем с любым овощным салатом, помидорами, чатни. К ним отлично подходит харисса.
