Когда у меня появляются лисички, я каждый раз готовлю их с картофелем (рецепт можно посмотреть здесь) и мне настолько нравится это блюдо, что ничего другого из лисичек я даже не пыталась делать. До тех пор, пока мне не попался на глаза этот легкий в исполнении и весьма утонченный рецепт Алена Дюкасса.
В принципе, по этому рецепту Дюкасс предлагает готовить не только лисички, но и шампиньоны, если лисичек не найдется. Шампиньоны нужно разрезать на четыре части и обжарить в отличие от лисичек только один раз, не откидывая после выделения первой воды.
Рецепт:
800 г лисичек
2 горсти листьев шпината
12 зернышек миндаля
половина лимона
1-2 зубчика чеснока-конфи (рецепт чеснока-конфи см. здесь)
10 г сливочного масла
оливковое масло, свежемолотый перец
1. У лисичек обрезаем нижнюю часть ножек, крупные грибы разрезаем пополам. Моем в нескольких водах, обсушиваем. Моем и обсушиваем шпинат. Лимон нарезаем небольшими кусочками. Чеснок-конфи измельчаем.
2. Разогреваем в сковороде немного оливкового масла, выкладываем лисички, солим, жарим на сильном огне буквально 1 минуту, чтобы с грибов выделилась вода. Отбрасываем лисички на дуршлаг, выделившуюся воду удаляем.
3. Сковороду вытираем бумажной салфеткой, ставим на огонь, растапливаем сливочное масло. Снова кладем в сковороду лисички, жарим на сильном огне 3 минуты.
4. Добавляем шпинат, нарезанный лимон, измельченный чеснок-конфи и миндаль. Готовим, помешивая, пока шпинат не подвянет. Обильно перчим из мельницы и сразу же подаем.
В оригинальном рецепте миндаль следует предварительно очистить, на вкус это особо не влияет, но блюдо с выглядит более презентабельным. Чтобы очистить миндаль, нужно залить его большим количеством кипятка на 10 минут, затем воду слить, миндаль ополоснуть холодной водой и еще раз залить кипятком, теперь небольшим количеством. Когда вода остынет так, чтобы можно было орешки держать в руке, вынимайте их по одному из воды, нажимайте на шкурку, ядрышки выскользнут сами.
