В последнее время в глазах диетологов брокколи стала чем-то вроде панацеи, так как в ней содержатся вещества, которые защищают буквально от всего. Оказывается, брокколи богата бета-каротинами, антиоксидантами, витамином С и целым набором полезных микроэлементов и органических соединений. И при этом, ее калорийность — всего 25 ккал на 100 г продукта! Ну, просто — идеальный овощ! Поэтому ешьте брокколи как можно чаще, готовьте из нее такие вот прекрасные супчики. Только не используйте для их приготовления магазинные бульонные кубики, иначе вся ценность супа исчезнет без следа, ведь в бульонных кубиках присутствует практически одна соль, приправленная искусственными ароматизаторами и добавками, только имитирующими и вкус, и цвет куриного бульона.
Рецепт:
3 головки брокколи
800 мл куриного бульона
16 ядер миндаля или готовые миндальные лепестки
зелень
оливковое масло, соль, свежемолотый перец
1. Головки брокколи моем, отделяем десяток мелких соцветий, откладываем их в сторону. Удаляем жесткую часть стеблей, остальные стебли и соцветия крупно режем.
2. Разогреваем куриный бульон. Приготовим емкость с колотым льдом.
3. Разогреваем в кастрюле немного оливкового масла, в течение 2 минут обжариваем брокколи на сильном огне. Вливаем кипящий бульон, готовим 10 минут, чтобы капуста стала нежной.
4. Быстро перекладываем содержимое кастрюли в миску, ставим миску в наполненную льдом емкость, чтобы капуста быстро охладилась и сохранила насыщенный зеленый цвет.
5. Как только капуста охладится, разбиваем ее блендером до однородности.
6. Ядра миндаля очищаем, нарезаем лепестками.
7. Отложенные соцветия брокколи соединяем с половиной миндальных лепестков, солим, перчим, поливаем струйкой оливкового масла.
8. В центр глубоких порционных тарелок раскладываем горкой соцветия брокколи с миндальными лепестками, сверху кладем по ложечке свежего мягкого сыра, посыпаем несколькими крупинками морской соли, перчим из мельницы. Вокруг получившейся горки наливаем пробитый блендером суп, украшаем миндальными лепестками и рубленной зеленью. Подаем либо слегка теплым, либо холодным.
Ну и конечно, если приготовить суп на овощном бульоне, не добавлять к нему ложечку сыра, или вместо сыра взять соевый тофу, то этот суп вполне может превратиться в постное кушанье. Приятного аппетита!
