Рецепт:
500 г филе трески
1 луковица
1 зубчик чеснока
по 1/3 ч. ложки молотой корицы, молотой гвоздики, молотого тмина
4 куска черствого белого хлеба
1 перец чили
пучок кинзы
1 яйцо
1 ст. ложка лимонного сока
соль, перец, растительное масло
1. Лук и чеснок измельчаем, обжариваем в растительном масле до золотистого цвета. Добавляем все сухие специи, перемешиваем и перекладываем в миску.
2. Хлеб измельчаем в блендере в крошку, третью часть добавляем в луковую смесь, остальное оставляем для панировки.
3. Измельчаем в блендере рыбное филе.
4. Перчик чили очищаем от зернышек, измельчаем. Кинзу мелко рубим.
5. Смешиваем рыбный фарш, луковую смесь, перчик чили, часть кинзы. Добавляем яйцо и лимонный сок. Все хорошенько перемешиваем.
6. Оставшуюся кинзу смешиваем с хлебными крошками.
7. Из полученного фарша формируем котлетки, обваливаем их в крошках, жарим на растительном масле на сильном огне по 3-4 минуты с каждой стороны до образования золотистой корочки. Затем убавляем огонь и обжариваем еще 10-15 минут, периодически переворачивая.
