Этот оригинальный чизкейк — холодного приготовления. Делать его совсем несложно, а результат порадует любого гурмана. Сочетание рассыпчатой сладкой основы, тающей во рту нежной и пикантной на вкус сырной массы с козьим сыром и сочных кисло-сладких ягод малины исключительно гармонично, хотя и весьма неожиданно.
Рецепт:
2 упаковки по 125г мягкого козьего сыра snofrisk
300г жирной сметаны
0,5 стакана сахара
12г желатина
цедра половины лимона
малина
мята
для основы:
150г сухого печенья
2 яйца
0,5 стакана сахара
70 г сливочного масла
1 ст. л. муки
1. Сливочное масло растапливаем. Печенье разбиваем в крошку.
2. Яйца взбиваем с сахаром, добавляем масло, крошку из печенья и муку.
3. Выкладываем массу в смазанную разъемную форму, выпекаем в разогретой до 170ºС духовке 25минут. Достаем из духовки, охлаждаем в форме.
4. Желатин заливаем 1 стаканом холодной кипяченой воды, оставляем на 10 минут. Затем ставим на водяную баню, прогреваем до полного растворения, часто помешивая. Добавляем сахар, продолжаем мешать до полного растворения сахара.
5. Смешиваем сметану с сыром и цедрой, вливаем в смесь желатин с сахаром, хорошенько размешиваем до однородности.
6. Выкладываем бока формы с остывшей основой пленкой. На основу выкладываем сырную массу, ставим в холодильник минимум на 3 часа, до полного застывания.
7. Готовый чизкейк вынимаем из формы, убираем пленку, выкладываем сверху ягоды малины, украшаем листиками мяты.
