Пока малина еще не закончилась и впереди еще один выходной и вечер сегодняшнего дня тоже, можно успеть приготовить с этой красивой и ароматной ягодой еще что-нибудь необычное и от души полакомиться. Предлагаю сделать этот шоколадный рулет, он великолепен и очень прост в приготовлении, гарантированно получится даже у новичков на кухне. А завтра постараюсь дать рецепт настоящего летнего торта с ягодами и малиной.
Рецепт:
200 г коричневого сахара
500 мл сливок жирностью 35%
200 г малины
1. Желатин заливаем небольшим количеством холодной кипяченой воды, оставляем на 20 мин.
2. Муку и крахмал просеиваем в миску, добавляем какао-порошок и разрыхлитель.
3. Белки отделяем от желтков. Взбиваем в большой миске белки с 4 ст. ложками теплой воды и 125 г сахара в пышную пену. Подмешиваем к ним чуть взбитые вилкой желтки и постепенно, хорошенько размешивая, добавляем все это в сухую смесь.
4. Смазываем маслом противень, застилаем его бумагой. Выкладываем сверху полученную массу, разравниваем поверхность лопаткой. Ставим в разогретую до 190°C духовку на 10-12 минут.
5. Готовый бисквит вынимаем из духовки вместе с пергаментом и, пока он теплый, скатываем его в рулет. Даем остыть.
6. Сливки взбиваем с оставшимся сахаром и ванильным сахаром в густую пену.
7. Желатин нагреваем на водяной бане до полного растворения, ни в коем случае не кипятим. Вливаем тонкой струйкой в сливки, хорошенько перемешиваем.
8. Рулет аккуратно разворачиваем, выкладываем на него сливки, сверху равномерно раскладываем малину. Опять скатываем рулет, теперь уже с начинкой, одновременно отделяя его от пергамента. Ставим в холодильник до полного застывания начинки.
Готовый рулет украшаем малиной и листиками мяты. Можно посыпать его тертым шоколадом.
