Многие народные кухни ассоциируются с временами года. Итальянская, например, — с осенью, а грузинская — с летом. Летом пахнет и французская кухня. Очередное ее блюдо — клафути. Это такой интересный десерт из ягод и жидкого блинного теста, что-то среднее между запеканкой и пирогом.
Классический вариант клафути готовится с вишней и лучше, когда она с косточками. Аромат от них просто изумительный. Можно сделать клафути и с черешней. Она, конечно, здесь уступает вишне, но клафути и с ней получается отменным.
Рецепт:
500г черешни
1стакан муки
150г сливочного масла
4 яйца
1стакан молока
125г сахара
1ст.л. ванильного сахара
сахарная пудра
Яйца и молоко заранее достаем из холодильника, нагреваем до комнатной температуры.
Вынимаем из черешни косточки. Смазываем форму маслом, выкладываем в нее черешню.
Растапливаем сливочное масло, немного охлаждаем.
Слегка взбиваем миксером яйца. Продолжая взбивать, добавляем понемногу просеянную муку, затем масло, частями сахар и ванильный сахар. Понемногу вливаем молоко. Взбиваем до однородности. Выливаем получившееся тесто на ягоды.
Ставим форму в разогретую до 200оС духовку. Через 10 минут температуру снижаем до 180оС, выпекаем 25-30 минут. Готовность проверяем, проткнув пирог в центре кончиком ножа, если он сухой, клафути готов.
Посыпаем клафути сахарной пудрой.
Остужаем 5 минут. Подаем теплым.
Клафути можно делать и с замороженными ягодами, только не нужно их размораживать, чтобы они не дали сок раньше времени.
