Родиной абрикоса считается Китай, а лучший абрикосовый пирог родился все-таки во Франции.

Рассыпчатое песочное тесто, нежные солнечные абрикосы и превосходный миндальный крем. Отличное сочетание. Абрикосовый тарт к летнему сезону.

Рецепт:

 

готовое песочное тесто

800г спелых абрикосов

 

Для миндального крема:

 

80г готового марципана (можно заменить на рубленый в крошку миндаль)

80г сливочного масла

2 желтка

2ст.л. коньяка или темного рома

миндальные лепестки

 

 

Готовим миндальный крем.

 

Заранее достаем все продукты для крема из холодильника. Они должны быть комнатной температуры, масло и марципан — мягкими.

 

Отщипываем  марципан небольшими кусочками, складываем в блендер. Добавляем масло, желтки и коньяк. Смешиваем до однородности.

Накрываем, оставляем при комнатной температуре.

Собираем тарт. Смазываем маслом форму, укладываем в нее раскатанное песочное тесто, прижимаем к стенкам, излишки обрезаем.

Накалываем тесто вилкой, выкладываем на него миндальный крем.

Сверху выкладываем половинки абрикосов, вдавливая их в крем. Промежутки между абрикосами посыпаем миндальными хлопьями.

Выпекаем в разогретой до 180оС духовке 30-35 мин.
