Кабачки, помидоры, грибы… это блюдо больше ассоциируется с летом, чем с ранней весной. Но кто нам мешает использовать летние заготовки и приготовить его и сейчас? Возьмем замороженные белые грибы и рубленные помидоры, купим молодые кабачки (они как раз сейчас появились на прилавках), купим на рынке свежей зелени и приготовим весенний вариант блюда. А летом приготовим его еще раз, но уже с овощами нового урожая.
Рецепт
4 порции
500г рубленых помидоров
300г замороженных лесных грибов
4 молодых кабачка
1зубчик чеснока
пучок петрушки
листики мяты, соль, перец
Нарезаем кабачки кружками, рубим петрушку и мяту, очищаем и раздавливаем чеснок.
Грибы не размораживая кладем в сковородку с разогретым оливковым маслом, жарим на среднем огне под крышкой до тех пор пока они полностью не разморозятся. Снимаем крышку, жарим почти до готовности, добавляем кабачки, жарим еще 5 минут. Перекладываем в тарелку.
Быстро обжариваем чеснок и половину зелени в оливковом масле на среднем огне, 1 минуту. Добавляем помидоры, солим, перчим, готовим 15 минут периодически помешивая. Добавляем грибы с кабачками, готовим еще 10 минут. В конце добавляем оставшуюся зелень.
Пасту ( Тальятелле, фетучини ) отвариваем в большом количестве воды согласно инструкции на упаковке.
