Давно у нас не было киша. Сегодня я поделюсь с вами рецептом своего любимого летнего киша, который я пеку каждый год, как только появляются молодые кабачки. Он действительно по-настоящему летний, — хрустящие зеленые кабачки, вкусные и ароматные грунтовые помидоры с юга и все это на очень легкой воздушной основе из слоеного теста. Пирог настолько легкий, что незаметно съедается в один миг, съел бы еще, да уже нечего.
Рецепт:
250 г готового слоеного теста
2 молочных кабачка
2 средних помидора
1 ч.л. сушеного орегано
2 яйца
150 г сметаны
соль, свежемолотый перец
мука для посыпки рабочей поверхности и формы для запекания
1. Рабочую поверхность слегка посыпаем мукой, раскатываем тесто в круг по размеру формы для запекания плюс высоту ее бортиков. Форму слегка смазываем маслом, посыпаем мукой, излишки муки стряхиваем. Выкладываем тесто в форму, прижимая его ко дну и бортикам. Свисающее с формы тесто обрезаем, прокатав скалкой. Накалываем дно вилкой, отправляем форму с тестом в холодильник на 20 минут.
2. Кабачки и помидоры моем, обсушиваем бумажными полотенцами, нарезаем тонкими кружками. Выкладываем овощи на тесто: помидоры в центре круга, кабачки по окружности. Посыпаем щепоткой орегано.
3. Яйца взбиваем, добавляем сметану, перемешиваем до однородности. Приправляем солью, перцем и оставшимся орегано. Заливаем этой смесью овощи.
4. Разогреваем духовку до 200ºС, выпекаем флан на среднем уровне 30-35 минут.
5. Дать немного остыть, подавать теплым.
