Рецепт:
для теста:
125 г муки
2 яйца
1 ст.л.сахара
пакетик ванильного сахара
125 мл молока
1 ст.л оливкового масла
растительное масло, корица, соль
для начинки из яблок:
2 средних кисло-сладких яблока
сок половины лимона
для начинки из абрикосов:
750 г консервированных абрикосов
4 ст.л. водки
2 бутона гвоздики
для ванильного крема:
250 мл молока
125 мл жирных сливок
1/3 ст. сахара
1/2 ст. ванильного сахара
цедра 1 лимона
3 желтка
2 ст.л. картофельного крахмала
соль
Готовим крем. Молоко доводим до кипения, добавляем 2 ст.л.обычного и весь ванильный сахар, мешаем до полного растворения. Добавляем измельченную цедру и щепотку соли. Желтки взбиваем с оставшимся сахаром, добавляем крахмал, перемешиваем. Добавляем к желткам горячее молоко, постоянно перемешивая в течение 2-3 минут. Ставим охлаждаться.
После остывания крема взбиваем сливки в пышную пену и аккуратно смешиваем с остывшим кремом. Сливки должны быть охлажденными.
Готовим блины. Если делаем блины с яблоками, — очищаем яблоки от кожуры, специальным ножом из целого яблока удаляем сердцевину, нарезаем яблоки кружками толщиной 1 см. Смазываем кружки лимонным соком.
Если с абрикосами — поливаем половинки консервированных абрикосов водкой, добавляем гвоздику, оставляем на 3 часа. Периодически перемешиваем.
Отделяем белки от желтков, желтки взбиваем с обычным сахаром, добавляем ванильный сахар и оливковое масло. Добавляем муку и молоко, солим, хорошенько перемешиваем. Взбиваем белки в крепкую пену, вводим порциями в тесто, аккуратно мешая лопаткой снизу вверх.
В глубокой сковородке на среднем огне разогреваем большое количество масла. Яблочные кружки окунаем в тесто, жарим в масле с двух сторон до золотистого цвета. Готовые блинчики выкладываем на бумажные полотенца. Посыпаем сахарной пудрой и, по желанию, корицей.
Подаем с кремом.
