Сейчас время Великого поста, пищу животного происхождения употреблять не предписывается. А овощи — это пожалуйста, в любом виде: вареные, пареные, печеные и сырые.
Сегодня блюдо из сырых овощей. Не вареное. Заимствованное у сыроедов. Оригинальное, вкусное, полезное и сытное одновременно. Настоящая витаминно-энергетическая бомба. Входящие в состав продукты — просто набор чемпионов по содержанию полезных веществ.
Семечки льна лидируют по содержанию омега-3 кислот и натуральных гормонов – линганов. Семечки подсолнуха – ценнейший источник витамина D, ценнее печени трески. И те и другие содержат полезные витамины, аминокислоты, жиры и, сбалансированные не хуже мясных, белки. Сельдерей богат клетчаткой, витаминам В, С,К, РР и Е, каротином и полноценным набором минералов. Морковь лидирует по содержанию каротина, а красный сладкий перец — по содержанию витамина С.
Котлетки из сельдерея
12 шт.
0,5 небольшого клубня сельдерея
1 морковка
0,5 сладкого перца
1 стебель сельдерея
1 ст. очищенных подсолнечных семечек
0,5 ст. льняных семечек
соль, перец
Перемалываем семена в кофемолке.
Нарезаем произвольно перец и стебель сельдерея, измельчаем в блендере.
Сельдерей и морковь натираем на средней терке.
Смешиваем все ингредиенты, тщательно перемешиваем, формируем котлетки, укладываем на противень с пергаментной бумагой.
Включаем духовку в режим конвекции при 500С, ставим котлетки прогреться и подсушиться на 1 час. Через 30 минут перевернем на другую сторону. Если духовка без конвекции, ничего страшного, в обычной духовке котлетки тоже подсушатся. Главное, придерживаться значений температуры.
Подавать котлетки с салатом из помидоров и огурцов или с огуречным майонезом.
Огуречный майонез
Это уже вторая витаминно-энергетическая бомба.
2 больших огурца
60г орехов кешью
1 луковица шалота
4 зубчика чеснока
по 1 маленькому пучку укропа и кинзы
сок 1 апельсина, 1 лайма и 0,5 лимона
горсть тыквенных семечек или кедрового ореха
4 ст.л. оливкового масла
1 ст.л. яблочного уксуса
1-2 ст.л. меда
соль
Произвольно нарезаем огурцы, зелень и лук. Измельчаем все ингредиенты в блендере
и взбиваем до однородной, в меру густой массы.
Подаем к котлеткам или поедаем с бородинским хлебом.
