У меня этот летний чудесный торт имеет кодовое название «Племянник». Впервые я готовила его к приезду в гости племянника с супругой. Я колдовала над ним поздним вечером, переходящим в ночь, чтобы к раннему утру он успел застыть и был готов к их приезду. А утром мы поехали встречать долгожданных гостей на вокзал и было так забавно, когда они появились на перроне со своим фирменным презентом из Киева, — «Киевским» тортом в руках. Вот мы тогда поели тортов!
Тортов много не бывает
Рецепт:
200г сдобного печенья
100г сливочного масла
30г желатина
400мл сливок жирностью 35%
500г сметаны
150 сахара
1 апельсин
400 малины
разъемная форма диаметром 24 см
для ягодного соуса
200г разных ягод
3 ст.л. апельсинового сока
2 ст.л. сахара
для оформления:
ягоды
сахарная пудра
1. Печенье разбиваем блендером в крошку, смешивает с маслом комнатной температуры.
2. Из пергамента вырезаем круг такого же диаметра, как и форма для выпечки и полоску высотой больше, чем бортик формы и длиной равной ее окружности. Застилаем форму пергаментом.
3. Выкладываем печенье в форму, утрамбовываем, ставим в холодильник.
4. Желатин замачиваем на 5 минут в теплой воде.
5. В сотейнике нагреваем третью часть сливок, не доводя до кипения. Снимаем с огня, добавляем желатин, размешиваем, остужаем.
6. Сметану, сахар, апельсиновые цедру и сок взбиваем, добавляем сливки с желатином. Оставшиеся сливки взбиваем до стойкой пены, вводим в мусс. Выкладываем мусс на печенье.
7. Малину перебираем, ополаскиваем, обсушиваем, аккуратно по одной вводим в мусс. Ставим в холодильник на 3 часа.
8. Приготовим соус. Взбиваем блендером ягоды, сахар и апельсиновый сок.
9. Выкладываем соус сверху на мусс, украшаем ягодами.
