Мало кто знает, что прообразом известного хита австрийской кухни — штруделя — является венгерский ретеш. Мягко говоря, австрийцы позаимствовали рецепт у венгров и сумели его прославить. А венгры, в свою очередь, находясь более века под османским владычеством, научились у турков технике изготовления тончайшего вытяжного теста, из которого готовится знаменитая пахлава. И это тесто венгры применили по своему разумению. Они не стали раскладывать его слоями, перемежая начинкой, как делали это в своем десерте турки, они свернули его вместе с начинкой в рулет. Так появился на свет новый десерт, его имя — венгерский ретеш (то бишь, — штрудель).
Рецепт:
140 г муки
1 яйцо
2 ст.л. растительного масла
соль
для начинки:
400 г вишни
30 г сдобного сухого печенья
50 г сливочного масла
40 г сахара
1 ст.ложка крахмала
1/4 ч.ложки молотой корицы
1 желток
2 ст.ложки молока
1. Муку просеиваем горкой на рабочую поверхность, делаем углубление, добавляем туда яйцо, 1 ст.ложку масла, 50 мл теплой воды, щепотку соли. Замешиваем однородное тесто. Формируем шар, смазываем его оставшимся маслом, накрываем полотенцем, оставляем на 30 минут.
2. У вишни удаляем косточки, смешиваем ее с крахмалом.
3. На рабочем столе расстилаем большое кухонное полотенце, посыпаем мукой. Раскатываем на полотенце как можно тоньше тесто в прямоугольный пласт, смазываем размягченным сливочным маслом.
4. От одной из длинных сторон отступаем 10 см, остальное тесто посыпаем растолченным в крошку печеньем. На печенье укладываем вишню, посыпаем ее сахаром, смешанным с корицей, а сверху укладываем кубики сливочного масла.
5. Свободный от начинки кусок теста смазываем взбитым с молоком яйцом. Сворачиваем рулет, используя полотенце, как направляющую. Аккуратно снимаем с полотенца, защипываем шов и боковые срезы.
6. Противень смазываем маслом, посыпаем мукой и укладываем ретеш швом вниз. Смазываем оставшимся взбитым яйцом.
7. Выпекаем в разогретой до 180ºС духовке 40-50 минут. Подаем теплым или остывшим.
