У меня опять «Монблан», только теперь намного проще, чем первый. Это уже классика жанра, именно в таком исполнении этот известный французский десерт завоевал любовь и популярность во Франции, северных регионах Италии и на горнолыжных курортах Альп. В его составе только каштановое пюре, отсаженное в виде горы, и взбитые сливки, имитирующие снежную шапку. Да шоколад для декора. Все гениальное – просто.
Рецепт:
250 г готовых каштанов в вакуумной упаковке
250 мл молока
100 г сахарной пудры
1/2 стручка ванили
250 мл сливок жирностью 35% + 2 ст.ложки
20 мл темного рома
100 г горького шоколада
щепотка молотого кардамона
засахаренные каштаны, какао-крупка для украшения
1. В сотейник кладем каштаны и сахарную пудру, заливаем молоком. Стручок ванили расщепляем, выскабливаем семена, добавляем их в сотейник, туда же кладем и стручки. Ставим сотейник на умеренный огонь, доводим до кипения, 5 минут кипятим. Достаем стручки ванили, смесь остужаем и быстро взбиваем блендером до однородной кремовой массы. Добавляем ром, перемешиваем.
2. Сливки взбиваем с кардамоном в стойкую пену.
3. Шоколад мелко рубим, растапливаем на водяной бане, добавляем 2 ст.л. сливок, прогреваем 1 минуту при постоянном помешивании.
4. Сборка. Каштановое пюре перекладываем в кондитерский мешок, отсаживаем на сервировочное блюдо в виде горы. Поливаем шоколадом, сверху шапкой выкладываем взбитые сливки. Украшаем засахаренными каштанами, какао-крупкой и сразу подаем.
Если вы не смогли купить каштаны в вакуумной упаковке, купите неочищенные каштаны, сделайте крестообразные надрезы на верхней части каждого и бланшируйте в слегка подсоленной воде 5 минут. Затем остудите, очистите от кожуры и мембраны, и вы получите такой же продукт, как и в вакуумной упаковке.
