Ньокки — это такие маленькие итальянские клецки. Когда-то их делали только из муки и картофеля, сейчас же появились тыквенные, свекольные, шпинатные и творожные ньокки, напоминающие знакомые нам ленивые вареники. Только ленивые вареники — блюдо сладкое, а творожные ньокки с грибами сладким блюдом не назовешь. Итальянцы относят ньокки к пасте и соответственно подают с пармезаном и перцем. Интересное сочетание получается. И вкусное.
Рецепт:
300 г творога
2 яйца
3/4 стакана муки
100 г тертого пармезана
2 маленькие луковицы
50 г сливочного масла
1 веточка свежего розмарина
2 больших белых гриба или 50 г сухих грибов
40 мл белого сухого вина
80 мл сливок жирностью 33%
80 мл овощного бульона
оливковое масло, соль, перец
1. Творог протираем через сито в большую миску. Добавляем яйца, 80 г пармезана, просеянную муку, щепотку соли и перец. Вымешиваем до однородности, накрываем полотенцем, ставим в холодильник на 30 минут.
2. Тем временем приготовим соус. Свежие грибы очистить, протереть влажной салфеткой, крупно нарезать. Сухие грибы заливаем кипятком, плотно закрываем крышкой, оставляем на 30 минут, затем откидываем на дуршлаг, крупно нарезаем. Лук измельчаем, розмарин разбираем на листочки.
Разогреваем в небольшой кастрюле смесь сливочного и оливкового масел, обжариваем лук и розмарин до мягкости лука, 5 минут. Добавляем грибы, готовим на среднем огне 6 минут. Вливаем вино, даем ему полностью выпариться. Вливаем в соус сливки и бульон, доводим до кипения, приправляем солью и перцем. Снимаем с огня, накрываем, держим в теплом месте.
3. На присыпанном мукой поверхности скатываем творожное тесто в колбаску диаметром примерно 2 см. Нарезаем ее кусочками толщиной 1 см.
4. В большой кастрюле доводим воду до кипения, солим. Порциями отвариваем ньокки, пока они не всплывут. Вынимаем шумовкой и сразу перекладываем в кастрюлю с соусом.
5. Перед подачей на стол прогреваем ньокки до нужной температуры, но не доводим до кипения. Подаем, посыпав тертым пармезаном и свежемолотым перцем.
