Конверт из пергаментной бумаги или, как его еще называют — папильотка, как способ приготовления считается одним из самых здоровых и наиболее сохраняющим всю ценность запечатанного в нем содержимого. В плотно закрытом, почти герметичном конверте продукты готовятся в собственном соку и в результате сохраняют свою мягкость. Можно даже не пользоваться солью, а если положить в конверт какие-нибудь пряные травки, то аромат будет просто восхитительный. Ведь ничего не испаряется, все остается в конверте. Недостатком такой технологии можно назвать лишь окрашивание бумаги, но если не допускать высоких температур, при которых бумага окрашивается раньше, чем приготовится блюдо, то и этого можно почти избежать. И не заменяйте бумагу фольгой, она хрупкая и окисляет продукты, в которых содержатся кислоты.
Рецепт:
4 фиде куриной грудки весом по 200 г каждое
200 г моцареллы (или сулугуни)
2 помидора
4 зубчика чеснока
1 веточка розмарина
2 веточки петрушки
крупная морская соль, свежемолотый перец, оливковое масло
1. Куриные грудки натираем перцем, смазываем со всех сторон оливковым маслом, оставляем на 15 минут.
2. Чеснок очищаем, два зубчика нарезаем тонкими кружочками, два оставшихся кладем в ступку. Добавляем 3/4 ч. ложки соли и мелко порубленные листики розмарина и петрушки, толчем все в пасту. Обмазываем получившейся пастой куриное филе.
3. Помидоры нарезаем тонкими кружочками, моцареллу — тонкими ломтиками.
4. Бумагу для выпечки нарезаем кусками размером приблизительно 30х40 см. В центр каждого куска бумаги укладываем куриное филе, на него — кружки помидора, затем ломтики чеснока и моцареллы. Сбрызгиваем оливковым маслом. Поднимаем стороны бумаги и складываем их 2 — 3 раза над получившимися башенками из курицы и моцареллы, затем закручиваем свободные концы, как конфетные фантики. Укладываем конверты на противень и отправляем в разогретую до190ºС духовку на 15 минут.
5. Вынимаем противень из духовки, раскладываем конверты по тарелкам, даем постоять 5-7 минут. Подаем, надрезав верх конверта крест-накрест.
