Кальмары с картофелем и помидорами

Сочетание кальмаров и картофеля мне казалось странным, пока я не попробовала это блюдо традиционной неаполитанской кухни. Теперь я готовлю его с завидной регулярностью. Что тут скажешь, —  браво итальянцам!

Кальмары с картофелем и помидорами, 2015

Рецепт:

600 г очищенных кальмаров

600 г картофеля

2 больших помидора

10 лепестков помидоров конфи ( как их готовить смотрите здесь.)

1 зубчик чеснока

маленький пучок петрушки

1/2 стакана сухого белого вина

щепотка молотого красного острого перца

оливковое масло, соль

Если у вас нет помидоров конфи, и не найдется на их замену вяленых на солнце томатов, то блюдо можно приготовить и без них. Получится не так ярко и чуть менее ароматно, но все-равно — вкусно.

1. Чеснок давим плоской стороной ножа. Кальмары нарезаем средними кусочками или брусочками, обжариваем их на небольшом огне в глубокой сковороде с 2-3 ложками масла с чесноком и острым перцем 1 минуту.

2. Поливаем кальмары вином, готовим, пока вино не выпарится. Снимаем с огня, достаем кальмары из сковороды шумовкой, перекладываем на тарелку.

3. Картофель очищаем, нарезаем кубиками. Помидоры очищаем от кожицы и семечек, удаляем жидкость, нарезаем средними кубиками.  Кладем картофель и помидоры в сковороду, где готовились кальмары, солим, закрываем крышкой. Готовим 35 минут на слабом огне, изредка помешивая.

4. Кладем  в сковороду помидоры конфи, перемешиваем, готовим 2 минуты. Затем добавляем кальмары, готовим еще 3 минуты. Снимаем с огня, посыпаем рубленной петрушкой, подаем горячим.
