Мясо с кислыми фруктами — это уже классика жанра и, наверное не стоит говорить о том как здорово фруктовые кислоты помогают усваиваться жирному мясу. Но о том насколько это вкусно, сказать стоит. Представьте себе тающее во рту нежное свиное мясо, полностью пропитанное кисло-сладкими соками слив. С пикантными нотками тимьяна и розмарина. Это действительно вкусно. И что мне здесь еще особо нравится, так это превосходный дуэт слив и розмарина. Я уже говорила, это пара — мои фавориты.
Рецепт:
1,5 кг свиной корейки с тонким слоем жира одним куском 8 крупных слив 150 мл граппы или коньяка 1 л сухого белого вина 1 средняя луковица шалот 1 веточка тимьяна 1 веточка розмарина 2 ч.л. зернистой горчицы оливковое масло соль, свежемолотый перец1. Из слив удаляем косточки, разрезаем на четвертинки. Заливаем сливы граппой или коньяком на 1-2 часа.
2. Снимаем листики с веточек розмарина и тимьяна, мелко режем. Лук тоже мелко режем.
3. Выкладываем на разделочную доску кусок мяса жиром вверх. Острым ножом делаем наискосок куска глубокие надрезы, разворачиваем кусок на 180º, надрезаем наискосок в другую сторону так, чтобы получились ромбики. Вкладываем в надрезы сливы.
4. Аккуратно перевязываем мясо бечевкой. Посыпаем сверху листиками тимьяна и розмарина и луком.
5. Перекладываем мясо в глубокую форму для запекания, сбрызгиваем оливковым маслом, закрываем форму крышкой. Ставим в разогретую до 180ºС духовку на 1 час.
6. Смешиваем горчицу с вином.
7. Достаем мясо из духовки, солим, перчим. Заливаем вином с горчицей и, не закрывая крышку, возвращаем в духовку на 20 минут.
8. Еще раз достаем мясо из духовки, поливаем граппой или коньяком, в которых замачивались сливы. Возвращаем в духовку еще на 20 минут.
9. С готового мяса аккуратно снимаем бечевку, нарезаем ломтиками. Выкладываем ломтики в сервировочную тарелку, поливаем образовавшимся во время тушения соусом.
