Представить лето без свежих зеленых огурчиков на столе невозможно. Существует много разных блюд с огурцами, но чаще всего из них готовят все-таки салаты. И по большей части – для сопровождения главных блюд. Этот же салат вполне себе самостоятельное блюдо. Этакий идеально сбалансированный коктейль из белков различного происхождения (рис и морепродукты), медленных углеводов (рис) и витаминов(овощи и зелень).
Рецепт:
300 г колец кальмаров
200-250 г отварного риса жасмин
2-3 горошины белого перца
1 лавровый лист
долька лимона
1 большой огурец
1 зеленое яблоко
горсть листьев петрушки
несколько перьев зеленого лука (лучше шнитт-лука)
лимонный сок
для заправки:
4 ст.л. оливкового масла
2 ст.л. натурального йогурта
1 ч.л. лимонного сока
соус табаско
соль, свежемолотый перец
1. Наливаем в кастрюлю 500 мл воды, солим, добавляем лавровый лист, горошины перца, дольку лимона. Доводим до кипения.
2. Кладем кольца кальмаров, доводим до кипения, варим 4 минуты. Воду сливаем, кальмары обсушиваем.
3. Яблоко очищаем, разрезаем на четыре части, удаляем семена, нарезаем соломкой. Сбрызгиваем лимонным соком.
4. Огурец не очищая нарезаем такой же соломкой, как и яблоко.
5. Листья петрушки измельчаем, лук режем мелкими колечками.
6. Соединяем кальмаров с яблоком, огурцом, зеленью и отварным рисом.
7. Готовим заправку. Смешиваем все ингредиенты для заправки, солим, перчим.
8. Заправляем салат заправкой.
