Союз мяса со свежей кислинкой фруктов и ягод придумали на Востоке. В Европу эту идею в Средние века привезли крестоносцы и с тех пор повара традиционно сочетают утку или гуся — с яблоками, курицу — с клюквой или виноградом, говядину — с черносливом, баранину с айвой, изюмом, курагой, инжиром, а свинину — со сливами, персиками и смородиной. Такие сочетания давно стали классикой жанра, — кисло-сладкие фрукты и ягоды идеально дополняют мясо в любом виде. К тому же, фруктовые соки, пропитывая мясо, размягчают грубые мясные волокна, мясо становится более нежным, более вкусным, и лучше усваивается, особенно если оно жирное.
Рецепт:
500 г свиной вырезки
1 пучок укропа
1 ст.ложки цедры лимона
50 мл белого сухого вина
1 ст.ложка растительного масла
для соуса:
200 г белой смородины
200 мл сухого белого вина
1 ст.ложка сливочного масла
3 горошины душистого черного перца
сахар, соль, черный перец по вкусу
1. Свиную вырезку моем, обсушиваем, нарезаем медальонами. Укроп моем, обсушиваем, измельчаем.
2. В миске смешиваем вино, растительное масло, лимонную цедру и укроп. Кладем свиные медальоны, тщательно перемешиваем так, чтобы соус покрыл куски мяса со всех сторон. Накрываем миску пленкой, оставляем в теплом месте на 1,5 часа.
3. Смородину моем, снимаем ягоды с веточек.
4. Наливаем в сотейник вино, ставим на огонь, выпариваем, пока объем не уменьшится наполовину. Добавляем душистый перец.
5. Мясо вынимаем из маринада, обжариваем на сухой разогретой сковороде 5 минут. Вливаем маринад, доводим до кипения, уменьшаем огонь и готовим еще 3 минуты.
6. Соус от мяса сливаем в сотейник с вином, смесь доводим до кипения. Мясо накрываем крышкой, оставляем в теплом месте.
7. В закипевшую смесь вина и мясного соуса добавляем ягоды смородины, готовим 4 минуты. Добавляем по вкусу сахар, соль, перец и сливочное масло, перемешиваем. Прогреваем 2 минуты и снимаем с огня.
8. Раскладываем мясо по порционным тарелкам, поливаем приготовленным соусом.
