Хорошие замороженные креветки должны иметь одинаковую окраску, блестящий неповрежденный панцирь и скрюченный хвост. Чем сильнее загнут хвост у креветки, тем меньше она прождала своей очереди на заморозку. Но это касается только мелких холодноводных креветок. Крупные же креветки, даже качественные, не всегда бывают с поджатым хвостом. Слипшиеся и поломанные креветки — результат некачественной заморозки. Зеленая голова не говорит о некачественной креветке, это результат питания определенным видом планктона. Коричневая голова тоже не порок, такое бывает у беременных самок. А вот черная голова говорит о том, что креветку есть нельзя.
Креветки маркируются цифрами: 100/120,70/90 и т.п.. Это информация о том, сколько креветок помещается в 1 кг веса. Например, 100/120 значит, что в килограмме содержится от 100 до 120 креветок. Получается, чем меньше цифры, тем крупнее креветки.
как размораживать креветки
Креветки следует размораживать медленно. Лучше делать это загодя на верхней полке холодильника, положив замороженные креветки в дуршлаг. Дуршлаг нужно поставить над глубокой миской, куда будет стекать талая вода, накрыть крышкой и оставить все это на 8-9 часов.
Если же вы торопитесь, положите креветки в специальный мешочек для замораживания и опустите его в теплую воду. Вкус и аромат при таком размораживании не пострадает, но все же медленное размораживание предпочтительнее. Ни в коем случае не кладите замороженные креветки прямо в теплую воду, так они потеряют и сок, и вкус. Размороженные креветки не стоит замораживать снова, их нужно приготовить и съесть.
Креветки можно и не размораживать. Достаточно положить их в кипящую подсоленную воду, не очищая от панцирей. Варить нужно под крышкой, чтобы вода быстрее закипела. А как закипит, варить буквально 10 секунд, после чего кастрюлю снять с огня и дать креветкам еще минут 20 полежать в горячем бульоне. Можно также опустить замороженные креветки в сильно нагретое растительное масло и поджаривать на маленьком огне при помешивании до состояния готовности.

Чистить креветки просто. Нужно отделить голову от туловища, а туловище очистить от хитина – панциря. Затем нужно удалить кишечную вену. Это такие длинные тонкие темные трубочки, которые проходят вдоль всего туловища и портят эстетический вид продукта. Чтобы избавиться от них нужно острым ножом сделать неглубокий надрез по внешней поверхности туловища, затем немного раздвинуть ткани и удалить эти жилки. Такую операцию можно делать и с сырыми, и с приготовленными креветками.
как готовить креветки
От того, какие креветки вы будете использовать: свежие, свежезамороженные или варенозамороженные, будет зависеть и способ их приготовления. Если креветки уже готовые, их только размораживают, с ними готовят салаты и холодные закуски. С сырыми креветками работы больше, но и блюд приготовить с ними тоже можно значительно больше: из них можно сварить суп, зажарить во фритюре, запечь на гриле, или поджарить на сковороде. Главное, помните, что при длительном воздействии высоких температур мясо креветок превращается в подобие резины. Поэтому не готовьте креветки более 4-5 минут. Как только креветки станут оранжево-розовые снаружи, а внутри полупрозрачное мясо превратится в белое – они готовы.
