Один из главных хитов болгарской кухни – шопский салат – известен, вероятно, каждому, кто побывал в Болгарии. Его можно найти в каждом меню и его обычно первым предлагают в любом кормящем заведении страны, будь то простая механа или престижный ресторан. И вы, наверняка, его отведали (а может и не раз), не особо задумываясь при этом над его названием. Салат и салат, с овощами и брынзой, немного похож на известный уже греческий салат с фетой, а о чем говорит слово “шопский”, — да кто ж его знает.
А, оказывается, шопы – это такая народность, которая проживает в Болгарии, Сербии и Македонии. От них в национальной болгарской кухне появилось немало интересных неординарных блюд, ставшими впоследствии ее визитной карточкой. Это и хорошо известный нам шопский салат, и малоизвестная, но однозначно заслуживающая внимания исключительно вкусная “сирене по-шопски”, что в переводе с болгарского значит брынза по-шопски.
Рецепт:
400 г брынзы
4 средних помидора
4 больших яйца
4 ч.ложки сливочного масла
1-4 перчика чили
молотая паприка, тимьян
4 маленьких горшочка для запекания
1. Брынзу нарезаем кубиками или просто крошим. Если она слишком соленая, заранее вымачиваем ее в молоке.
2. Помидоры нарезаем кружочками. Перцы чили разрезаем пополам, удаляем семена и перегородки , нарезаем тонкими полосками.
3. На дно каждого горшочка кладем кружочки помидоров, посипаем полосками чили, сверху кладем брынзу и затем снова помидоры. Поверх всего разбиваем яйцо. Крошим на него немного брынзы, добавляем еще помидоры, приправляем паприкой и тимьяном. Сверху кладем немного полосок чили и кусочек сливочного масла.
4. Отправляем горшочки в разогретую до 220ºС духовку. Запекаем 20 минут.
Просто, не правда ли? Этот замечательный рецепт опять же из книги Е. Чекаловой «Ешьте!» (говорю же, — настольная книга). Как пишет автор, ее научили готовить это блюдо в семье болгарских друзей мужа.
