Пока еще в наших магазинах не раскупили остатки моцареллы, приготовим напоследок самый простой и самый популярный итальянский салат Капрезе. Его название идет от острова Капри на юге Италии, где он родился. Минимальное количество ингредиентов, необыкновенно удачно подобранных по вкусу и цвету, имитирующему цвет итальянского флага, сделали Капрезе национальным блюдом Италии.
Простота салата удивляет. Казалось бы, сыр и помидоры, приправленные зеленью и маслом, — что такого? Но как вкусно! Главный секрет салата — в свежести и качестве продуктов. В традиционном рецепте используется моцарелла из буйволиного молока, помидоры сорта «бычье сердце», листья свежего зеленого базилика и оливковое масло Extra Virgin. До недавнего времени все эти продукты без проблем можно было купить и у нас. Сейчас же…грустная история… Ближайший доступный нам аналог моцареллы — мягкий сорт сулугуни.
Рецепт:
2 помидора «бычье сердце» (как замену можно использовать качественные помидоры черри, 8-10 штук)
200 г моцареллы
1 пучок зеленого базилика
70 мл оливкового масла Extra Virgin
1 ст.л. бальзамического уксуса
1 ч.л. меда
соль, свежемолотый перец
1. Помидоры нарезаем дольками. Если используем черри, разрезаем их пополам.
2. Моцареллу нарезаем пластинами толщиной 0,7 см.
3. Листья базилика моем, обсушиваем, нарезаем соломкой.
4. Смешиваем в миске помидоры, моцареллу, базилик.
5. Масло взбиваем венчиком с уксусом и медом. Солим, перчим по вкусу.
6. Заправляем маслом салат.
