Гаспачо — настоящая витаминная бомба и в летний жаркий день этот суп просто находка, — он и насытит, и зарядит энергией и приятно охладит. Существует больше полусотни разновидностей гаспачо, но в основном его готовят из очень спелых мясистых помидоров с добавлением хлеба, сладких перцев и огурцов. И непременно эти овощи должны быть очень спелыми, ароматными и качественными, — такими, какими они бывают у нас только летом.
Рецепт:
1 кг спелых мясистых помидоров
2 сладких красных перца
1 перчик чили
1 огурец
3 веточки тимьяна
2 зубчика чеснока
1 лимон
1 батон белого хлеба
1 ст. ложка красного винного уксуса
несколько капель соуса табаско
оливковое масло
соль
1 стакан измельченных кубиков льда
1. Овощи и зелень моем, обсушиваем. Помидоры обдаем кипятком, снимаем кожицу, разрезаем на 4 части, удаляем семена. Оба вида перцев разрезаем пополам, удаляем семена и перегородки. Огурец очищаем от кожицы. Нарезаем все овощи небольшими кубиками.
2. Чеснок очищаем и измельчаем. С хлеба срезаем корку, мякоть нарезаем кубиками.
3. Складываем овощи, чеснок и хлеб в большую миску, добавляем слегка растертые пальцами рук листики тимьяна и соль. Разбиваем блендером до однородной массы.
4. Кубики льда кладем в полотняное полотенце, измельчаем при помощи кухонного молоточка. Набираем 1 стакан измельченного льда, добавляем в миску с супом. Оставляем суп до полного таяния льда.
5. Добавляем в суп уксус, 2-3 капли соуса табаско, выдавливаем из лимона сок ( смотрим, чтобы не попали косточки). Взбиваем суп блендером еще раз, затем протираем через сито.
6. Добавляем оливковое масло по 1-2 ст. ложки на порцию, подаем очень холодным.
В Испании гаспачо принято подавать в высоких стаканах с кубиками льда. Отдельно к нему подают хрустящие хлебные палочки или кубики подсушенного хлеба, хамон, вареное яйцо, морепродукты, а иногда и просто коктейльную соломку, чтобы пить гаспачо как коктейль.
