Как-то уже принято в Масленицу разговаривать о блинах, блинчиках и оладьях, а я вот о масле. О том самом сливочном масле, которым в этот праздник положено объедаться, обильно сдабривая им все эти блины, блинчики и оладьи. А чтобы масло за неделю не приелось или, того хуже — не сильно отложилось на боках, его можно разнообразить всевозможными наполнителями, которые с одной стороны придают маслу новые вкусовые оттенки, а с другой стороны – уменьшают количество самого масла в общем объеме съеденного продукта. Ведь такое масло как бы “разбавлено” добавками с нулевым содержанием жира, но зато с большим количеством витаминов и клетчатки. Это и полезно, и очень вкусно, и никогда не надоедает.
Можно приготовить масло с травами, масло с перцами, масло с вялеными помидорами, с чесноком, с курагой, с черносливом, с сушеной клюквой, с клубникой, и так далее, поле для фантазии здесь обширное. Но мы сегодня остановимся на рецепте моего любимого петрушечного масла все из той же книги Елены Чекаловой “Ешьте!”. Верите, я делаю его уже полгода и каждый раз сожалею, когда оно заканчивается.
Рецепт:
250 г сливочного масла
120 г листьев петрушки
1 небольшая головка чеснока
1 ч.л. лимонного сока
2 ст.л. дижонской горчицы
2 ст.л. измельченного миндаля
1 ч.л. соли
1. Растапливаем 50 г масла на сковородке, добавляем чеснок, тушим его, пока он не станет прозрачным, 30 — 60 секунд. Немного остужаем.
2. Третью часть петрушки мелко рубим, остальную петрушку измельчаем в блендере вместе с лимонным соком. Добавляем теплый чеснок с маслом, горчицу, рубленный миндаль, соль и оставшееся сливочное масло, все хорошенько взбиваем. Выкладываем в миску, добавляем оставшуюся рубленную петрушку, перемешиваем.
3. Выкладываем полученное масло на фольгу, заворачиваем колбаской, кладем в холодильник.
4. Подаем с хлебом, кашами, блинами, оладьями, рыбой, мясным стейком и пастой. Петрушечное масло прекрасно хранится в морозильнике.
