Дорогие, друзья! Поздравляю вас со светлым праздником Пасхи! Мира, добра и благодати вам и вашим семьям! А я к вам сегодня не с куличами, как принято, и не с крашеными яйцами, а с вкуснейшим, по-настоящему весенним супом из сибаса. Попробуйте.
Рецепт:
2 крупных сибаса
1 л рыбного бульона
4 яйца
6 средних помидор
2 средние луковицы
2 красных сладких перца
6-8 зубчиков чеснока
60 мл оливкового масла
300 мл белого сухого
листья петрушки
соль, перец
1. Рыбу чистим, удаляем внутренности и жабры, полностью заливаем ледяной водой, оставляем в холодильник на 2 часа.
2. Лук режем полукольцами, помидоры — на 4 части. Перец разрезаем пополам, удаляем семена и перегородки, нарез длинной соломкой.
3. В жаропрочную форму вливаем оливковое масло, кладем очищенный чеснок, помидоры, лук и перец. Запекаем в разогретой до 180ºС духовке 30 минут. Добавляем рыбу, солим, перчим, запекаем 30 минут. Вливаем в форму белое вино и портвейн, готовим еще 15 минут. Добавляем бульон, закрываем форму, продолжаем готовить еще 1 час.
4. Аккуратно достаем рыбу, снимаем все мясо, кости выбрасываем. Вынимаем половину овощей для гарнира, бульон процеживаем через сито, держим в тепле.
5. Готовим яйца пашот. В небольшой кастрюле доводим до кипения воду, вливаем уксус. Размешивая воду с уксусом, аккуратно разбиваем в образовавшийся водоворот одно яйцо, уменьшаем огонь, варим 2-3 мин. Аккуратно вынимаем яйцо шумовкой, перекладываем в холодную воду. Так же готовим остальные яйца.
6. В центр порционной тарелки выкладываем овощной гарнир, кусочки рыбы и яйцо, заливаем горячим бульоном, украшаем петрушкой и подаем.
