Армянская кухня считается одной из древних на земле и в ней большая роль отводится сухофруктам. Сухофрукты используются в приготовлении любых армянских блюд, — их добавляют к овощам, с ними готовят мясо и рыбу, их кладут в супы. От таких комбинаций блюда армянской кухни получаются очень своеобразными на вкус, они невероятно ароматные, весьма пикантные и внешне очень аппетитны. Этот суп тому подтверждение.
Рецепт:
400 г говядины
4 картофелины
150 г кураги
2 ст. ложки томатной пасты
2 ст. ложки сливочного масла
1 ст. ложка кинзы и петрушки
соль, свежемолотый перец
1. Мясо моем, кладем в кастрюлю, заливаем 1,5 л холодной питьевой воды, доводим до кипения. Снимаем пену, варим на среднем огне 1-1,5 часа. Вынимаем из бульона, даем остыть.
2. Лук очищаем мелко режем, обжариваем на растительном масле 7 минут. Добавляем томатную пасту, готовим 2-3 минуты.
3. Картофель очищаем, нарезаем кубиками. Курагу промываем. Вареное мясо нарезаем кусочками.
4. Бульон процеживаем, доводим до кипения, кладем обжаренный лук, картофель и курагу. Солим, перчим, варим 20 минут. При подаче посыпаем зеленью.
